From simple ingredients come a delectable meal. That's the hallmark of Neapolitan cooking, much of which derives from peasant tradition. Eggs in Purgatory is no exception. It takes a few humble staple ingredients and makes a heavenly dish, attainable even if you're wallet is in financial purgatory!

Uovo in Purgatorio (Eggs in Purgatory)

Onion
Garlic
Pepper (optional)
Olive oil
Tomato sauce (or leftover pasta sauce)
Salt and pepper
Parsley
Basil
Eggs

Mince the onion and garlic, and chop the pepper if you’re using it. Saute them in olive oil until soft. Add the tomato sauce and seasonings. Cover and simmer about 10 minutes. Carefully break the eggs and place them on top of the sauce. Cover and let cook for about 10 minutes, until the eggs are cooked to your desired doneness. Serve and enjoy!
