This cozy restaurant in Rome's Trastevere district is scrupulously local and authentic. They adhere to the Slow Food principles, use regional recipes (even ancient Roman recipes), and make everything in-house. The pasta is handmade, the sauces and all components of the meal are made in the kitchen, not purchased. They use nothing frozen and don't deep-fry anything. The meats, eggs and vegetables are purchased directly from the producers.

They have what is likely the oldest wine cellar in Rome, too, placed below ground level amidst ancient bricks and remains. It's a beautiful trip into the past and a lovely way to choose your vino!

Spirito di Vino is open for dinner starting at 7:00 PM until 11:30 PM. Closed Sundays.
