Cetara is famous throughout Italy for the fishermen and fish packing of alici, or anchovies. These are not like the tinned anchovies found across the ocean at all! They are filleted and preserved in oil or in salt. And then there is the golden liquid that Cetara really excels at, the colatura. The anchovies are salted and pressed in wooden containers; the colatura is the liquid that comes forth, delicious drizzled on pasta and other dishes.
