Caseificio Matteassi Cheese
Carrying on the traditions of the Valdichiana, this cheese producer is anything but ordinary. Started in 1965, the family's third generation is continuing the work, creating cheeses that are both traditional and innovative. There is the just-made ricotta, so fresh you won't believe it! They make primarily varieties of pecorino (sheep's milk) but also blends with cow milk and goat milk cheese. The signature cheeses are the special pecorinos that are flavored or aged in interesting ways.
The flavored cheeses are infused with things like garlic, or onion, or truffle. Those aged ones are done in things like straw, cracked pepper, coffee grounds, and walnut or chestnut leaves, or grape must. Some cheeses are aged in old wine barrels, and some are aged in caves.
