There are numerous versions of this delectable stew - it can be made with veal, pork or lamb meat. It usually includes potatoes, and often peas, but you can also find versions with chunks of artichokes or bell pepper in them, too. You can cook it on the stovetop, or put it in the oven to heat up the house on a cold winter day. Here is a basic recipe for veal stew with potatoes and peas. Adapt it at will to suit your taste.

Veal pieces, onion, garlic, potatoes, wine, beef or vegetable broth, peas, tomatoes, salt and pepper, bay leaf

Flour cubes of veal and brown in olive oil. Add the onion and garlic, and saute until softened. Pour in the wine and cook to evaporate. Add the remaining ingredients and simmer until cooked, adding broth if needed. Or you can put into a clay pot or ceramic dish and bake until done. Serve as is, on polenta for a really hearty winter dish.
