Roman cuisine doesn't get much more traditional than Roma Sparita, a real trattoria in the old time sense. You won't lack atmosphere, though; there are tables outside to enjoy a meal al fresco, or in the dining room inside. It's in Trastevere, one of Rome's most characteristic quarters.

But it's really all about the food, so dig in and enjoy a plate of their specialty -tagliolini al cacio e pepe, a gorgeous, perfectly fried artichoke, or a plate of oxtail stew. There are other truly Roman offerings, of course, all done in the way grandma would make them. Service may be slow. Best to reserve ahead.

Open for lunch and dinner. Closed Monday.
